Harshbrown Omelette

I need more more ideas to pack Prince morning breakfast, lunchbox for recess & lunch ... now that he need to stay for supplementary class & ECA after normal school hours for some days.

As age is catching up, I'll need to pen down the menu. Otherwise, i will forget them. It's rather helpful for me in planning & making a quick fix for his 2-3 meals in the morning.

My biggest satisfication is son enjoy his food and the nice feedback. It's so comforting that he said he don't need get school canteen food, as he got better food choice and it's tasty. With such wide choice of food varieties, you could image his size ahhh....

New add to my menu ...
Ingredients
1 slice bacon
1 pc harsh brown
1 egg
2 tbsp milk
dash of pepper salt
some shredded cheese

Method
1. Cook bacon (I used the toaster) & cut into bite
2. Lightly fry harsh brown w/o oil (or use toaster) & chopped into small pieces
3. Mix egg, milk & pepper salt
4. On the flat pan, pour in the mixture.
5. Continue to spread on the harshbrown and sprinkle cheese
6. Lastly top it with bacon

It takes 2

Just felt like capturing this moment on Saturday Feb 21, for these 2 little princess. They are so sweet and adorable, can't resist snapping a picture for the both of them. Two girls borned in the same year with their birthday 3 days apart.

Moist Chocolate Cake

Happy Birthday to my 2 colleagues that shared the same birthday ~ today. I baked the cake this early morning and brought it to the office. It's still warm when we eat it.

The only set back about this cake was .... there's a cracked line at the top (whereby i removed the ring before the cake is cool off) otherwise it's a nice yummy cake. :( Running out of time, otherwise i could have done a plastic surgery to restore the beauty of this cake to 一切完美

Now into the box and ready to office for the mini celebration. I've disgust the crack by placing the Happy Birthday tag there to kinda of block the defect.

This is my share of the sliced cake. Yummy ! not too sweet and moist enough.

Overall, I'm happy with this bake despite the defect.

Ingredient A
150g butter
300g brown sugar

Ingredient B
2 eggs

Ingredient C
200g boiling water
45g Valrhona cocoa powder

Ingredient D
1 tsp bi-carbonate soda }
1/2 tsp baking powder } Sieve together
150g plain flour }

Method :
1. Beat ingredient A till fluffy and light

2. Add ingredient B and beat till smooth

3. Gradually put ingredient C & D alternately

4. When well mix and pour into the grease baking tin

5. Bake @ 180c for 40-45 mins

6. Check if the skewer comes out clean, than let it stand for 5 mins before remove from oven


Chocolate Glazing
194g (100ml) whipping cream
1/2 tbsp + 1/2 tsp honey
150g chopped chocolate
19g butter

1. Boil whipping cream with honey
2. Add in chocolate and stir till melted
3. Finally stir in butter and a set aside

Warm Chocolate Cake Pudding

Finally i get my hand onto this desserts, after many good comments from my friends Kala, Food Cafe one after another.

Here's the recipe for 5 portions

Ingredients A
125g butter
125g Belcodlade Chocolate 55%

Ingredients B
50g egg yolks
125g eggs
50g castor sugar
1/4 tsp vanilla essence

Ingredients C
20g flour

Garnishing
Cookie ice cream or double chocolate ice cream

Method
1. Preheat oven @ 200c

2. Put butter and dark chocolate into a double boiler and cook over low heat until melt, stir well and set aside

3. Beat ingredients B until fluffy and add melted chocolate, stir well and add ingredients C. Mix well and set aside

4. Grease ramekins and sprinkle with flour. Turn it over to remove excess flour.

5. Scoop chocolate batter into ramekins and bake for about 8 mins (every oven varies - i baked mine for 11 mins) and remove

6. transfer to serving plate and serve together with ice cream

This is the diagnose section. The chocolate lava was scoop off by princess leaving behind the melted ice cream.

Crepes

This time round i did crepes using another different recipe from a chinese book i borrowed from the library.

The crepes was suppose to be for breakfast but end up i made it as tea break.
Ingredients
50g plain flour
10g castor sugar
1/8 tsp salt
1 egg
2 tbsp whipping cream (i omitted this)
1tsp butter melted
100ml milk (instead of 120cc milk)

Methods
  1. Mix flour, sugar and salt in a bow, use the hand egg beaten to mix well. This will allow the air blend in and allow the flour to be more fluffy.
  2. In the middle of the bowl of flour, add in egg and whipping cream. This allow the egg easier to blend well.
  3. After beating, add in milk gradually till well mix.
  4. Cover the bowl with cling wrap, and stand in room temperature for 1 hour
  5. Grease flat pan with butter and fry over lower heat. Remember to turn over the other side of the crepes to fry.
  6. When slight golden brown. Add in your favorite topping.
My family favorites topping variety are : Nutella, Cheese & Peanuts butter

Mini Brownie Cup

This was also baked on Friday morning, together with the Milo Chocolate chips cookies. Managed to make 12 mini brownie out of it. It went out to princess teachers & 2 of her school mates.
This is not my favourite brownie recipe, though it was from Hershey. I did half portion and modified slightly replacing margarine with butter.

Ingredients
70g butter (melted)
1 egg whites
1/2 egg
1/3 cup sugar
1/3 cup all purpose flour
1/2 cup Hershey cocoa
1/4 tsp baking powder
1/8 tsp salt

Method
Beat egg whites and egg in small bowl on medium speed of mixer until foamy; gradually add sugar, beating until slightly thickened and light in color.

Stir together flour, coca, baking powder and salt; gradually add to egg mixture, beating until blended. Gradually add melted butter, beating just until blended.

Fill muffin cups 2/3 full with batter.

Bake 15 mins @ 185c

Below is my standard for brownies, I really misses this homestyle ready made, " Two Bites Brownie". They are really moist, fudgy and delicious.

Milo chocolate chips cookies

OMG ! I didn't even realised that i had not been blogging for such long time.

Lately was very overwhelm in catching my Zzzzzz. Need to sleep and wake up early, so given my loves amiss lately. Here's my bake on Friday morning per my princess request for her classmates.

Milo Chocolate Chips Cookies
110g butter
70g castor sugar
1/2 tsp vanilla essence
1/2 tsp cream of tartar
1/4 tsp biscarbonate of soda
1/2 cup Milo powder
1/2 egg yolk
60g Hershey semi sweet mini chocolate chips
150g self raising flour

Methods

  1. Beat butter, sugar, vanilla essence, cream of tartar and bicarbonate soda till fluffy
  2. Add in milo, egg yolk and chocolate chips
  3. Finally add flour till well mix
  4. Shape the dough using a small teaspoon and place on the baking tray
  5. Bake @ 175c for about 15mins
