Black pepper crab

Cooking crab is so much easier nowadays, just buy from supermarket.  All cut and cleansed.

Ingredient
2 packet of mud crab (wash and mashed on the claw)
1 packet of Prima taste black pepper sauce
3 tbsp water

Add all ingredients  and stir fry over the preheated wok.  Easy easy

Sio Bak 烧肉

I never thought I could made this.  The entire preparation took me 2 days.  Eating it was so easy and fast.  crispy crispy.

Ingredient
approx 350-400g pork belly (go for less fat (

Dry Rub (mix)
salt 1 tbsp or less
white pepper 1 tsp
five spice powder 1 tsp

For brushing
Vinegar 1 tbsp
sea salt

Method
1. cleaned pork belly, light wash.   Remove fats nd hair that's visible.

2. Cook pork belly in water for around 10 - 15 mins.  Remove from water and let the white meat air dry on a small rack.  This is to drain away the excess water.   can keep it there for about 2 hrs.

3. Use the fish scaler and pricked as many small holes as possible.  Apply some vinegar or squeeze lemon juice all over the skin.

4.  Marinate the pork with the dry rub   Put the meat in a box and leave it in the fridge for next day use.

5. Finally out from the fridge into the AF using the grill pan.  Brush some vinegar and follow by rub salt on the skin.  AF 180c for 30 mins.  after re brush the vinegar on the skin and do another 30 mins or till golden

Simple mini shepherd pie


I have no exact measurements for this bake, just go by feel and estimation.

Baked potatoes in thermal pot.  When cooked, peel skin and mashed the potatoes.  Add some butter, pepper salt and dried parsley.  Mix well and set aside.

I used canned corn beef easily purchased from supermarket.  Simply mashed or loose up the beef in a bowl.

Get a ramekin or baking dish, fill the 1st layer with beef followed by a thick layer of mashed potatoes and spread out evenly.

Finally, baked in oven 180c 10 - 20 mins or till cooked.

Tau Kwa Pok

Bought quite a fair bit of satay the other day and I kept an unopened pack of satay peanut sauce.

So this is what I came out with tau Kwa Pok with peanut sauce instead of the rojak prawn paste.

I cooked the bean sprout w/o root with hot water.  When cooked drain it for later use.  I shred and slice some cucumber to give some crunching munch.

Followed by, sliced open the square tau Pok.   Stuffed in the bean sprout and cucumber in the middle opening of the tau Pok 豆卜.

place them flat on a AF wire basket @ 160c 8-10 mins

When done, eat with peanut sauce.

HappyCall Pan from Korea

I'm really excited over my new toy "HappyCall double sided pan" Order placed Aug 8 and shipment arrived from Korea at my house on Aug 18. It came in simple packing (A pan in a box)

My rating of the pan is ...

Great ! I had a good time test driving my new toy. I cooked early dinner for my family yesterday and here's the dishes ....
Cooking is a breeze. No more messy & oily.

- Due to quick & fast cooking time, it's better to have your meat well marinated before sending to the pan for cooking.

- The cool part was, i didn't use any oil on the pan.

Mini Pancakes

This recipe is from DK Children's Cookbook. Not of a shout about this making.

Without deny for pancake, it really goes well with maple syrup and bananas.

Ingredients
150g plain flour
1tsp baking powder
a pinch of salt
150ml milk
1 egg
30g caster sugar

* 30g unsalted butter for frying the pancake

Method
  1. Sieve the flour, baking powder and salt into the mixing bowl. Stir in the sugar with a wooden spoon and leave to one side
  2. Crack the egg into a bowl, add it to the milk and whisk them together.
  3. Pour the milk and egg mixture into the flour and beat them and gently fold in the blueberries (if any) taking care not to crush them
  4. Over a medium heat, melt the quarter of the butter in a large frying pan. When the butter begins to bubble, you are ready to start cooking

My New Toaster Oven & Pizza

My toaster oven end its journey last Sunday morning (20 Jun), when i tried to heat up the Swedish meat ball. My kids were so upset, as they can no longer use the toaster oven on their own. Immediately on Sunday night, I booked my new Philips toaster oven (out of stock). Finally the stock arrived today. Hubby and I quickly rush down Carrefour to pickup.

After cleaning up the toaster oven. My kids reminder me of the pizza, I took out the 9" cheese & tomato pizza from the freezer and started cooking it.

When the pizza is ready, I could see my kids smiles beaming away.

Lontong & Satay Chicken

Tonight dinner is ... Lontong & Satay Chicken.
Ingredients
1 packet Hai's Instant Lontong Paste
250ml Carnation evaporated milk
800ml water
long beans, cabbage (amount as desired)
2 pcs deep fried firm bean curd 豆干 (cut into triangular halves)
Hard boiled eggs
Lontong rice (I cooked this mini satay rice cake with my mini thermal pot)
Method
Heat up frying pan and stir fry 1 packet of instant lontong paste till fragrant.
Add in vegetables and fry for a short while
Add water and evaporated milk and transfer to thermal pot. Bring boiled mixture and put into the outer pot for further cooking.

My kids don't like lontong, so they have stir fried chicken satay with rice cake.

1 packet of ready to stir fry chicken satay. Stirred fried chicken over with 1 tsp of oil till cooked and fragrant.

Fried Arrow Head 炸慈姑片

I felt in loves with this Fried Arrow Head, after being introduce into eating it during last year CNY. A Couple of weeks ago, office nearby tibits stall were selling a small packet for S$5, yet i crave and bought to eat.

The taste of the arrow head is refreshing and crispy after fried, unlike the fried tapioca.

Arrow Head seems like a seasonal food, easily available during CNY period. When I was young, my grandma used to grow them like plant during CNY. Now its new role is ... tibits (munch munch)

In fact the making of the Arrow Head is easy.

1) Peel off the skin


2) Give it a good wash, soak in the water for a while. Drian and start slicing them into thin layer


3) Fried it over medium fire till lightly brown. May sprinkle some salt and give a good shake while keeping in a air tight container

Pandan Waffles

There was a Prima outlet closed down, so they are selling away almost everything inside the store (including some utensils, cutlery, premix flour). I was so excited cos Prima Waffle is the best in town, when I saw this premix for waffle and it comes with a recipe. Immediately i grab to buy them.

Taste wise was good (probably the coconut give the magic taste to it), just that the commercial waffle maker provide better texture. Prima give a a safe guide of their recipe, so those outlet selling would have to follow their instruction per attached. No matter which outlet we go, still the waffles taste yummy. Keeping up to the std, cos the most important was the Premix flour that makes the trick. The premix flour comes in 1 kg good for 20pcs, I had portion it to 2/10, therefore the quality might be affected.

Recipe (6pcs)
200g pandan waffle mix
2 eggs
100g water
100g coconut milk
34g Vegatable oil (i used canola oil)

Methods
  1. Put waffle mix into a mixing bowl , add the eggs and water and whisk for 6 mins until batter is thick
  2. Using ned speed, add in coconut milk and vegatable oil to mix for another 10 secs
  3. Allow the batter to rest for about 1 hr before using

Harshbown Bacon Chedder Cheese Puff

The name this bake was super long and complicated, in reality it's easy to make.

Ingredients
2 harshbrown (chopped)
2 slice bacon (bites)
70g self raising flour
70ml milk
1/2 egg (lightly beaten)
125g grated chedder cheese

Method
  1. In a bowl mix milk & egg
  2. Add in all the balance ingredient and give it a good mix with a spoon or spatula
  3. Drop a bite size of the mixture onto the lined baking sheet
  4. Baked at 200c for 18 - 20 mins or till golden brown

I was at Chip Bee Garden-Phoon Huat this afternoon and saw this new ice cream place - The Daily Scoop their latest outlet i guess.

Prince choice flavor :- Peach Bum! - need a buddy to chill out with? a tub of our peach yoghurt ice cream fits the bill

Princess pick flavour : Kookie Monster - so chockfull of cookies, we're sure the big blue monster would approve

Otah Sandwich

Clearing stock for bread. Here's the joke, my son SMS my hubby to get him bead, instead hubby came home with a loaf of BREAD. *** faint

In order to put the bread into good use for the stomach and I have Muar otah at my freezer. So I did Otah sandwich on Sunday.
Toasted & Non toasted bread

Personally I like the toasted otah sandwich. So crispy

Ingredient
1 packet Muar Otah (Prawn) - cook in microwave for 5-6 mins
8-10 slice bread
butter (optional for spreading on bread)

Equipment
Electric Sandwich maker for toasting
Manual Moulded Sandwich maker for non toast bread

Simple Meaty Dinner

Managed to grab some drumlets from Cold Storage this morning at a good deal. This was a recipe shared by a long time friend... many many year---s ago. After such a long time this is my first time making this Mexican chicken Drumlets. I could still remember the process of making this after such a long time. hahahha...

Dish #1 - Mexican Chicken Drumlets
Marinate 18 pcs drumlet with pepper salt and tabasco pepper sauce
Bake at 230c till cooked and brown (approximately 30-45 mins)
Dash some more tabasco sauce while baking
Dish #2 - Luncheon Meat ham, fried egg & tang hoon soup
1/2 can of Luncheon Meat Ham (cut into cube)
3 eggs season with sesame oil, add a little water and fried
2 small bundle of Tang Hoon (glass noodles) soak a little
1 litre water
fish sauce & soya sauce to taste
Finally bring everything to boil
Dish #3 - Luncheon Meat Ham & egg fried rice
A dish especially requested by Princess

Thai Pineapple Rice

When it comes to weekend, I'll need to think what to cook for the family. Think, think, think ... Ah... i got a packet of pineapple spice paste. Okay, lets set for Pineapple Rice tonight. It's simple and fast cook. You may follow the recipe and instruction stated on the packet.
In fact, it brought back memories of where I previously worked. We uses to cook lunch in the office, it was so fun and exciting. This is one of those dish where we made last time, really misses those times and the gang of lunchtime kaki.

Here's my shortcut and quick quick making.
Ingredients
1 packet Thai Pineapple Rice Spice Paste
300g Chicken Meat (cube)
1 pair of chinese sausage (Sliced)
6 rings of pineapple (bite size)
raisin, pork floss, cashew nuts as garnish
Cooked rice (Serving of 4)

Methods
  1. Cooked the desired amount of rice in the rice cooker
  2. While cooking the rice, stir fry the chinese sausage, put aside when cooked
  3. Put in the chicken meat onto the same pan and stir fry with pepper & salt, cooked set aside
  4. Do a quick stir fry over the chinese sausage, chicken meat & pineapple together
  5. When the rice about to cook, mix the packet of paste with the rice inside the cooker
  6. Pour in the stir fried items into the cooker and give a good mix
  7. Continue to allow the item to cook a little while more inside the cooker
  8. Finally serve rice with raisin, pork floss & cashew nuts
* I'm very pleased as princess likes the rice (minus the sausage, pineapple & meat) though she just ate it with pork floss. As for prince, he's always a good food supporter. He finished everything on his plate and ask for more.

Peach Crepes with Chocolate Sauce

Got some left over peaches and Princess loves crepes a lots. This recipe originated from Alex Goh (with slight modification) looks so tempting and i got all the ingredients needed and I did half the original portion. Yum yum...
Ingredient
(A)
1 egg
125g milk
17g sugar
pinch of salt

(B)
17g butter (melted)

(C)
40g flour

some peach slices

Method
  1. Mix (A) until sugar is dissolved. Add in (B) then sieve in (C) and mix until well combined
  2. Set aside and let it stand for 30 mins
  3. Heat frying pan with some butter. Pour in some batter and tilt the pan to spread the batter evenly
  4. Fry over medium heat until one side is browned. Flip the crepe over and cook
  5. You may put in any filling and glazing of your choice
Filling :-
1) peach with chocolate glazing (for hubby & grandma)
2) cheese with honey glazing (princess)
3) evaporated milk with honey glazing (prince)

Korean Dishes for Dinner

Tonight we're blowing the wind of 韩流, the dinner theme is Korean Food.

Last week been to Chinatown Point - Korean Food Fair and bought the following :-

1) Stir fried Chicken Glass noodle S$4
2) Ginseng Chicken Soup S$13
Menu for tonight is mainly Instant made meal, except korean-pan-fried-prawn-cake from Food Cafe which i made half the portion.
1) DIY pan fried prawn cake
2) Tasty Glass noodle (Good choice), just stir fry over a non stick pan. Very simple & easy.3) Unbeliveable Ginseng Chicken Soup, cos it consist 1 whole chicken (mini one) with glutinous rice. It only take 8 mins to microwave it.

Cinnamon French Toast

Ingredient
(A)
1 cup milk
1 egg
1 tsp sugar
1/4 tsp cinnamon powder
a pinch of salt

4 slices of French loaf
butter for pan fry
icing sugar for dusting (optional)

Method

  1. Mix ingredient A together
  2. Dip bread into the mixture
  3. Pan fry till golden brown

Serving Ideal

  • Golden syrup
  • Strawberry, grapes etc....
