Cheese Move

My family just loves "CHEESE". A normal 500g packet of shredded cheese can't even last in my fridge for 3 weeks. That's how fast cheese move in my family.

This is the size that I usually get ... 2 kg shredded chedder cheese. The usual brand that i used are out of stock, so will need to make do with any brand now.

Now I'll need to observe how fast this packet of cheese run out ?

Chocolate Chiffon

I was craving for Chocolate cake, so today i got my hand on this. Though I should have gone for a rich moist chocolate one, well ... I'll be back.

* Hubby just commented that this cake nice, not very sweet. Personally i felt need to adjust the sweetness up by a bit more.

Ingredient
(A)
70g semi sweet Hershey chocolate chip
150ml milk

(B)
50 ml canola oil
6 egg yolks
1 tsp chocolate paste
35g castor sugar
110g plain flour
1/4 tsp bicarbonate soda

(C)
6 egg whites
1/2 tsp cream of tartar
35g castor sugar

* If not using semi sweet chocolate, you could change the sugar back to total 100gm

Method
  1. Melt (A) over double boiler. Remove from double boiler and let it cool down.
  2. Add (B) into the cooled down chocolate and mix until well combined
  3. Beat egg whites until frothy, add cream of tartar and sugar and beat till stiff peak
  4. Fold 1/2 of the egg whites into chocolate mixture gently with a rubber spatula until just blended.
  5. Pour the balance cholocate mixture into chocolate mixture and continue to fold in gently
  6. Pour the batter into a chiffon and bake it for 40min at 180c
  7. When the cake is cooked, invert the cake to cool. remove the cake from the cake pan when it's completely cool

Honey Star Cookies

It has been a long while since i posted anything about food. I was really laze in baking ...

Even this honey star cookies has always been in my thoughts. Until today i got good reason of making it all in the name of "Children's Day". My daughter class is having a party, so each one need to contribute some food over. Hmmm ... now you see why the engine got started.

Making this cookie is rather easy too, can't really brag about it. Lets get moving now ...

Ingredients
140g melted butter
55g castor sugar
170g self raising flour (sifted)
1/4 tsp bicarbonate soda
60g Nestum

Garnishing - Honey Star

Method
  1. Beat butter and sugar till creamy
  2. Add flour, bicarbonate soda & nestum and just combined till it form dough
  3. Roll into small ball or scoop and drop onto the greased baking tray
  4. Garnish it with honey star
  5. Bake at 175c for 12 - 15 mins

Mini Pancakes

This recipe is from DK Children's Cookbook. Not of a shout about this making.

Without deny for pancake, it really goes well with maple syrup and bananas.

Ingredients
150g plain flour
1tsp baking powder
a pinch of salt
150ml milk
1 egg
30g caster sugar

* 30g unsalted butter for frying the pancake

Method
  1. Sieve the flour, baking powder and salt into the mixing bowl. Stir in the sugar with a wooden spoon and leave to one side
  2. Crack the egg into a bowl, add it to the milk and whisk them together.
  3. Pour the milk and egg mixture into the flour and beat them and gently fold in the blueberries (if any) taking care not to crush them
  4. Over a medium heat, melt the quarter of the butter in a large frying pan. When the butter begins to bubble, you are ready to start cooking

On 22 Aug, I made 2 sets of pillow and blanket for my kids beary. These are the left over from my patch work blankets and bean bags cover.

Homemade 2 tiers Birthday Cake

This year son requested for a 2 tiers custard birthday. I really scratched my head real hard, this is a big and challenging project.

Finally, i came out with this My Cooking Experiment-Chocolate Bananas Cake
and Best recipes - Custard Cake. Simply i just put the 2 cakes together and decorate it a little. Thou there're hipcup here and there, the cake is done up and edible. hahhaha


1) Base - Custard Cake
Ingredients
2 1/2 cups self raising flour
250g butter at room temperature
2 tsp vanilla essence
1 cup castor sugar
4 eggs
3/4 cup custard powder
1/2 cup milk

Method
  1. Put all the ingredients in a large mixing bowl. Mix with electric mixer until just combined
  2. Pour into the 8" round tin. Cook for 1 hour @ 180c
2) Top - Chocolate Cake
Ingredients
65g butter, sogten at room temp
1/2 cup caster sugar
1 egg
1/2 cup + 1/4 cup self raising flour
3/4 cup cocoa powder
1/4 tsp soda bicarbonate
1/2 cup milk

Method
  1. Grease the 6" round tin
  2. Combine butter, sugar, eggs, flour, cocoa, soda bicarbonate & milk with an electric mixer on low until just combined
  3. then beat on medium speed till smooth
  4. pour into pan at 180c for 30-35 mins
Initially,I wanted to make white cream to go round the cake. Instead of whipping up the whipped cream and mix it with the white chocolate. I went to cook it. Look how silly am I, good thing the cake still look good with some decor.

Ah boy 10th Year Old Wii Birthday Party - 7 Aug 10

Times flies ... Ah boy 10 years old lor.

This year we decided to celebrate his birthday at home with his school mates. It's a Wii's party = theme "Super Mario".
We had my own version of Mario Tee Kam game. Modern kids today said what Tee Kam, is it mahjong (OMG)

Pick and choose your lucky tickets and see what you get...

We had about 100 prizes inside the big Ikea bag for this Ti Kam. The kids were really excited and brought home happily their prizes.

As for food, we had pizza & sushi feast ... yum yum

Bread & Butter Pudding

Hmm ... Bread & Butter Pudding sound good to me. A super quick & rushy work this morning for my son lunchbox.

Ingredients (2 portion)
1 slice of white bread bread w/o skin & spread with butter
10g sugar
1 egg
150ml milk
1/4tsp vanilla essence

Method
  1. Cut the bread in cubes and arranged in a ramekin
  2. Beat egg, milk, sugar & vanilla in a bowl
  3. Pour the mixture into 2 remekin
  4. Bake at 220c for 15 mins

Hor Fun 滑蛋河粉

After work i went to Sheng Siong and found the fat fat hor fun (Just like those hor fun from the 煮炒stall)

This is a dish that i always wanted to try "滑蛋河粉". It look simple but tasty. Worth a try.
I don't have much ingredient, only fish ball and chye sim. It would be nice to go with prawn, squid etc...

Ingredients
500g hor fun
1 packet of cooked fishball
5g chopped garlic (add more if you like)
4 stalks chye sim (cut and boil)
1 egg (lightly beaten)

Sauce
1 can of clear chicken broth (史云生) 399ml
3 tsp abalone sauce
2 light soya sauce
3 dash of pepper salt

Thickening Glaze (mix well)
3 tbsp corn flour
4 tbsp water

Method
  1. Heat up wok until smoky hot. Add hor fun, light soya sauce and stir fry until very hot and well mixed. Dish onto a serving plate
  2. Heat up 1 tablespoon of cooking oil and fry chopped garlic till fragrant. Add in the sauce.
  3. Before adding in the thickening glaze give it a good stir. Stir quickly to get creamy sauce.
  4. Lastly add lightly beaten egg and off fire. Pour sauce over fried hor fun and serve

Kueh Makmur

Finally finally.... I managed to drag my tiring self (took the butter out to thaw but reluctant to put it back into the fridge) to bake this Kueh Makmur based on Feng Ying recipe, with some modification.
Pastry Ingredients (I made abt 63 pcs)
(A)
250g Butter (melted)
150g Ghee

(B)
1 Egg
1/4 tsp Vanilla essence
1/4 tsp Pandan paste

(C)
650g sifted plain flour

Peanut Filling
125g ground peanut
50g fine sugar
(All mix together)

Method
  1. Mix A evenly in a mixing bowl
  2. Add in B, mix till well combined
  3. Add in C and make into a dough
  4. Take some dough and wrap with some peanut fillings
  5. Shape the dough and nip it with pattern
  6. Bake at 180c for 20 mins
  7. Remove from oven, when cool sprinkle with icing sugar

Choco-lious Delights @ City Square

I was window shopping at City Square last Sat (10 Jul), managed to snap some picture about this Record Breaking Event for the longest swiss roll. After the event the swiss roll are sold S$10 and the proceed goes to charity. I didn't stay thru' the event, cos need to pick my daughter up from her class.

Something Fishy

Last Wed 7 Jul, dinner treat from our head office CAO at Greenwood Fish Bistro

I was quite skeptical about having fish for my dinner, cos I'm not a fishy person and i don't eat fish. Anyway, while walking into the dinning area, we passed by the market area... quite fishy smell though. When we reached our dinner table, no more fishy smell. Instead we got compensated back with the delicious food...

For sure, i didn't order fish.

Low lying Bananas tree

On Saturday Jun 26, after my gal attended her friend birthday party. While walking along Yuk Hong Ave, on the road side we saw this low lying bananas tree. It was so low lying that one can easily reach for the bananas.

Even my gal could reach and touch the bananas. Opps ! A grouchy look after a long afternoon playing, good things is she still pose for me ;p hahhaha

Today kids are back to school. A sneak of son lunch box. Cheese Bread, M&M cookies & Cherry. Got the same items for my gals just minus the cherry.

My family misses my cheese bread & cookies. To have a head start for school today, my son requested for M&M cookies so that he could bring school and share with his friend.

I've use a different recipe for my usual cheese bread this round, result well received

My New Toaster Oven & Pizza

My toaster oven end its journey last Sunday morning (20 Jun), when i tried to heat up the Swedish meat ball. My kids were so upset, as they can no longer use the toaster oven on their own. Immediately on Sunday night, I booked my new Philips toaster oven (out of stock). Finally the stock arrived today. Hubby and I quickly rush down Carrefour to pickup.

After cleaning up the toaster oven. My kids reminder me of the pizza, I took out the 9" cheese & tomato pizza from the freezer and started cooking it.

When the pizza is ready, I could see my kids smiles beaming away.

Peach Cake

Bake this Peach Cheesecake for my mama birthday.

Ingredients
Base :
120g digestive biscuits
60g butter, melted

Method

  1. Put biscuits in a plastic bag and crush it with rolling pin
  2. In a bowl add melted butter and mix well with the biscuit crumb
  3. Press into a 8" springform / detachable cake tin. Refrigerate for abt 30 mins

Ingredients - Filling
250g cream cheese
60g brown sugar
2 eggs
1 can peach - 300 gm cube peach, balance peach slice them for decoration

200g Marigold non fat yoghurt peach mango

Filling :

  1. Beat cream cheese and sugar until smooth
  2. Add egg and mix well
  3. Mix cube peach, yogurt and cheese mixture together
  4. Pour mixture into chilled base and bake at 180c for 40 -45 mins or until firm.
  5. Need to refrigerate after cool and serve with top peach slice
Cake before cosmetic
