Ultra Chocolate Cake

Today (Monday) mom on MC and hubby brought her to the doctor. Wasn't in time to pick Princess up from her school bus. Her school mate mom help to pick her up and even feed her lunch with her favourite Ayam Pengat.

I managed to get 2 loaf and a mini heart chocolate cake out from the recipe. Hot from the oven, we give 1 loaf to Princess schoolmate whose mom help to take care of her earlier.

This yummy chocolate cake served well with ice cream. So irresistable that i decided to give myself a treat at this wee hour (12 mid night).

Ingredients
200g plain flour (sieved)
1/2 tsp baking soda
1/2 tsp baking powder
275g castor sugar
175g butter
2 eggs
1 tbsp vanilla
175g chocolate, melted
80g Nestle cream
125g boiling water

Method

  1. Put the flour, baking soda, cocoa, sugar, butter, eggs, vanilla, chocolate & cream into a bowl and mix till smooth.
  2. Slowly incorporate the boiling water and divide the batter into 2 loaf tins
  3. Bake at 175c for 55 mins or until the insert comes out relatively clean.

Strawberry Muffins

Fresh strawberry not a favourite at home, so gonna find a way to utilise it quickly. Here's the Strawberry Muffin
Ingredients
1/4 cup Canola oil
1/2 cup milk
1 egg
1/2 tsp salt
2 tsp baking powder
1/2 cup castor sugar
1/4 cup brown sugar
220g All Purpose flour
1 cup chopped strawberries
1/2 tsp vanilla essence
1/2 tsp cinnamon

Method
  1. In a small bowl, combine oil, milk, vanilla & egg. Beat lightly
  2. In a separate bowl, mix flour, salt, baking powder, cinnamon & sugar
  3. Toss in strawberries & stir to coat flour
  4. Pour in milk mixture & stir together
  5. Fill muffin cups
  6. Bake at 190c @ 20mins for 18 mini cuppies

Crab Stick Egg Roll

  • Cocktail hotdog bacon wrap
  • Crab stick Egg roll
  • tokyo banana (bought back from Japan by a friend)
  • Grapes

Got new item for Prince lunchbox today - Crab stick Egg roll

Ingredients

  • 2 Crabsticks
  • 2 slice bread spread with butter
  • 1 egg omelette (halve)
  • some sprinkle of seaweed (optional)
  • mayonnaise

Method

  1. Place half portion of the egg omelette on top the bread
  2. Put the crabstick on top of the egg
  3. Finally spread some mayonnaise & spinkle seaweed
  4. Roll it and cut it, like a sushi roll

Good Old Jelly

This has been lying in my cupboards for quite sometime and hubby always request me to make it. It's his young time favourite. Hmmm .... better make this before it gets expired.
Today i had 2 helpers making this Jelly Crystals - Strawberry Flavour
Simple making - 1 packet jelly, 1 cup hot water and 1 cup cold water (NO cooking required)

Just follow the directions on the box.
- Dissolve jelly in 1 cup of hot water
- Stir it and when dissolved
- mix in 1 cup of cold water
- pour into mould and place in the refrigerator(need some patience as it take quite sometime to set)

Waffles

My latest toy from Carrerfour yesterday, it's their housebrand "Bluesky" waffle maker at a price S$17.90 (a good buy still though not on offer)
Today prince helped me to prepare and mix the ingredients. It's quite a simple make and ingredient can be found in my home.

Ingredient (serving of 7 pieces)
250g Plain flour (2 cups) } sifted
7g baking powder } together
25g sugar
6g salt
475ml milk (2 cups)
2 eggs
30ml Canola oil

Method
1. In a large bowl mix flour, baking powder, sugar & salt
2. Finally add in milk, eggs & oil and mix well
3. Pour abt 1/2 cup (or appropriate amt) of batter into the waffle maker
4. Cook until golden brown & removed
5. Serve hot or cold

Osmanthus Agar Agar 桂花菜燕

The fragrant of this Osmanthus is pleasant (桂花的清香). The kids & myself don't quite like the Osmanthus flower but the taste is refreshing.

I'm left with half packet of the agar agar powder, so here's recipe ...
Ingredients
6g agar agar powder
450ml water
100g sugar
1 tbsp Osmanthus sugar

Method
1. boil agar agar powder with water
2. when boil add in sugar
3. remember to keep stiring to avoid thicken
4. Finally add in Osmanthus sugar
5. Off fire and pour the mixture into mould
6. Cool the mixture before putting into the fridge
7. Best serve while cold

Butter cake trial

Today i go away with my usual favourite 2 recipe of butter cake and take up the challenge of using my favourite Alex Goh's one. Frankly I'm not very satisfy with the cake, as it didn't really meet my expectation. Still prefer the taste of my usual.

I adopted the Basic Creaming Method of Butter Cake

Ingredients
(A)
250g Butter
200g Sugar (i used 190g)

(B)
5 Eggs

(C)
210g Flour
1/2 tsp Baking powder

Method
1. Place (A) into the mixing bowl and cream till light and fluffy
2. Add (B) slowly and mix evenly
3. Cream the batter till smooth and light
4. Lastly fold in (C), mix till well blended
5. Pour the batter in loaf tin or any shape. Bake at 180c for 50 mins

Mini Chocolate Muffin cuppies

I'm in a mood to bake with chocolate, after seeing this Recipe. I got 13 mini pieces of cuppies.

My little helper
Ingredients A
125g cake flour
25g Valrhona coca powder
1tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
40g castor sugar
30g brown sugar

Ingredients B
1 egg (lightly beaten)
75g melted butter
80ml buttermilk
* to get buttermilk, just add 1tsp lemon juice to the milk and let it rest at room temperature for about 30min before using.

Method:
1. Mix (A) together
2. Mix (B) together in a mixing bowl
3. Pour (A) into (B) and mix everything till just moistened
4. Spoon batter into cuppies about 80-85% full (to get a mushroom head)
5. Bake at 190c for 20 mins

* it'll be nice to add some chocolate chip inside the muffin.
I find the cuppies alittle too plain looking, so i spread a layer of nutella and added some sprinkle.

Roti Kosong

The texture of this roti is soft & nice, though the look is pale.
Ingredients
250g bread flour
160ml water
10g butter
30g sugar
3/4 tsp salt
1 tsp instant yeast
1 tsp bread improver

Methods
I let the BM do the work, it took 1hr30mins to make the dough, after which divide it into 9 equal portions.
Place it into a tray and cover with wrap and let it rise in a warm place for 30mins or the size double
* remember to egg wash the top of the bun (i had that omitted that result to pale looking) before sending into the oven to bake at 180c for 12mins

Pamerson cheese bread toast

How to make :-

1 slice white bread (cut to any shape)
spread with butter
Sprinkle or dusting it with Pamerson Cheese

Put it in the oven to toast till slight brown

Cheesy Baked Rice

What's up for Prince Breakfast, Recess & Lunch lunchbox for school today ?

Fairy Bread & Warm Milk (son complained i gave him sugar stuff early in the morning ~ me sober lor have to admit lor, it's not so healthy)

Whipped potatoe

Cheese sandwich using Pooh cutter

Cheesy baked rice

Cheesy baked rice

Ingredient
Overnight cooked rice
3 tbsp Alfredo Cheese sauce (Ready made)
2-3 tbsp Mozzarella cheese
2-3 tbsp milk

Methods
1. Spread out cooked rice on the baking dish
2. pour in sauce & milk onto the dish and ensure they mix and kinda of cover the rice
3. Lastly sprinkle on the cheese
4. I bake it at the toaster oven @ 200c for 12-20 mins or till cheese melted

Fairy Bread

Not much bake over the weekend, as FIL was hospitalise on Saturday night for stroke on right side of his body. Now his condition is slowly improving though the road of recovery will be slow due to his age.

Now back to food ...
Here's a plate of Fairy Bread took 2mths ago, during Princess birthday party.
Princess loves the Fairy Bread so much that she requested to be made for her lunchbox this morning.
Here's a little history of it ... Fairy bread is commonly served at children's parties in Australia & New Zealand. The origin of this Fairy Bread is not widely known, but it may come from the poem 'Fairy Bread' in Robert Louis Stevenson's A Child's Garden of Verses, published in 1885. (Personally, i've not read this book)

The making of the Fairy bread is really really easy, all it needs is some magical touch to it . . . .

1. Spread a layer of margarine over a slice of white bread

2. Sprinkle with Thousand & hundred onto the spread
